Fiesta in a Bowl

For my friend Camry…

Fiesta in a Bowl

  • 1 can corn, drained
  • 1 can black beans, drained
  • 1 can Rotel (diced tomatoes and green chilies), drained

Mix it up, heat it up.

Variations on the theme:

  • Use it to top rice (Spanish rice or plain)
  • Use it to top a tortilla
  • Use it to top a salad
  • Use it to top a chicken breast or steak
  • Add cilantro, cumin, onion powder, lemon juice, salt
  • Add grilled chicken or beef
  • Add sliced, sauteed green peppers and onions for fajita-style
  • Add chopped avocado
  • Add salsa,┬ácheese,┬ásour cream
  • Blend it in with tomato soup
  • Scoop it up with tortilla chips
  • Chop it in the blender to make salsa

The basic recipe is so amazingly cheap, easy, and you can easily keep the supplies in your pantry forever.

  1. i had a friend just this past week invite me over for dinner and she cooke beans, corn and grilled chicken together and we put it in tortillas it was soo yummy.
