Pumpkin Chicken Noodle Soup

Don’t let the pumpkin throw you off. This is a very mild pumpkin soup that has the "comfort food" quality I crave during the winter. Besides pumpkin is chock full of vitamins, minerals, fiber, and antioxidants.

1 large can ready-to-eat chicken noodle soup (not condensed)
1 cup pumpkin puree
½ cup chopped carrot
½ cup chopped celery
½ tsp thyme
½ tsp allspice

Place all ingredients in a large pot, heat to boiling. Reduce heat and simmer until frothy. Stir frequently. Add water if needed to thin the soup.
