Cock-a-Leekie soup is a Scottish dish of leeks and chicken. It’s peasant dish with many regional variations which goes back as far as the 16th century. Ingredients:

  • Chicken broth
  • Chicken, cooked, skinned, boned and chopped
  • Leeks, chopped
  • Salt & pepper
  • heavy cream/evaporated milk/cornstarch & water to thicken

Method:

  1. Saute leeks, including green tops, in butter, oil or chicken fat
  2. Bring broth and chicken to a boil
  3. Add leeks and seasoning
  4. Reduce heat and simmer about 5 minutes
  5. Add thickening agent and mix well.

Barley is commonly added. I used egg noodles because that’s what I had on hand. I’m sure long grain rice or wild rice would also be good.

You can experiment with spices (thyme is common) and other vegetables (carrots or potatoes are common).
