1 lb. chicken, skinned & boned.
2 T. olive oil
1 small chopped onion
2 cloves minced garlic
2 (10 oz) cans diced tomatoes with chiles
1 (8 oz) can tomato sauce
½ tsp oregano
½ tsp cumin

Cut chicken into strips. Brown meat in olive oil. Add onion and garlic, cooking until soft.

Place in slow cooker, adding remaining ingredients and enough water to cover. Stir. Cook on low for 6-8 hours.

Pull apart and serve on tortillas or rice, garnish with sour cream and your favorite toppings (cheese, lettuce, diced tomatoes).
