Recipe – Four Food Groups Egg Salad Sandwich

Trying to increase nutrition in my food, and avoid some of the nutritiously neutral/negative ingredients, I did an experiment last night.

Four Food Groups Egg Salad Sandwich

  • 1 Hard-boiled Egg
  • 3 TBSP Low-Fat Cottage Cheese
  • A Squirt of Honey Mustard
  • 1 Stalk of Asparagus
  • 1 tsp Sweet Pickle Relish
  • 2 Slices Oat Bran Bread

I put the egg and asparagus in my slap-chopper and chopped the heck out of them. Then mushed the cottage cheese & honey mustard with a fork to break up the bigger curds. Mixed it all together and spread it on bread. Tasted pretty darn good.
